Namaste, today we'll make shahi paneer without oil. We will not use oil,ghee or butter in it. It will be so tasty that no one will recognize that you haven't add oil or ghee to it. Let's start! 200 grams of fresh paneer, cut it. Paneer is chopped. Moving on to the gas. Take a pan, we'll not add oil to it. Put 1/2 teaspoon of cumin seeds, some whole spices, 2 bay leaves, 1 cinnamon, 4 cloves and 10-12 black peppers. 1 big cardamom, peeled and seeds added. Now dry roast them till a good aroma comes. Flame is low-medium. Within 1-1.5 minutes spices are roasted. A good aroma is coming and a slight change in colour. Reduce the flame to low.
2 tomatoes, 1/2 inch of ginger, 1 green chilli and 1/4 cup of cashew, finely grind them. The paste is ready. Put it in the pan. Now roast them while stirring continuously. Keep the flame low-medium. We are roasting it without oil, so be careful. Keep stirring with the spatula, it should not stick to the pan. We roasted it for 2-3 minutes. Now add other spices, 1/2 teaspoon of turmeric, 1.5 teaspoon of coriander powder and 1 teaspoon of kashmiri red chilli, it will give a good colour to it but will not make it too spicy. If you want it to be more spicy, then add more chilli to it. 1 tablespoon of dry fenugreek crush it and put it in. it gives great taste to the curry. Remove the thick stems. This much is enough. It will give a good aroma. Now mix them and roast the masala. It looks a bit too dry, so we'll add some water to it. We'll use water as there is no oil in it. Add 2-3 tablespoons of water and roast while mixing it. As it hasn't roasted yet, it just dried.
Roast is nicely, tomatoes should cook completely, then only it will taste good. Pour some more water. I've added approx 1/4 cup of water to it. Roast it while stirring it. Till it becomes dry again. The masala has thickened. Roasted it for 5 minutes first again roasted it for 5 minutes. Roasted it for 10 minutes altogether. A very good aroma is coming. All the spices have cooked completely. The masala is roasted. Now we'll add water to it. You can add more or less water as you like. I am adding 1 cup of water to it. I've added a cup of water. Now make exactly as we make it with oil. We haven't added salt yet, put 3/4 teaspoon of salt or as per taste. Cover and cook it for 3-4 minutes, let it come to a boil. Open it, within 3 minutes it has come to a boil and see, texture is also forming. Now add paneer pieces in it. Mix it well. Take fresh paneer for it. Add some coriander leaves. Cover and cook it for 5 minutes at low flame. So all the spices mixes with paneer completely.
Cooked it for 5 minutes at low flame. Open it, a texture has come on it and the aroma is amazing. Stir it a bit. The curry is ready. Remove the bay leaves from it, their work is done. Remove them and the cinnamon. The rest spices will be very tasty. Turn off the flame and take it out in a bowl. Garnish it with some coriander leaves. No oil Shahi paneer is ready. It looks amazing. Everyone will love its taste. And you've seen the process, it is so easy. You can serve it with chapati, paratha, naan, rice or anything that you like. Everyone will love it.
