Full of nutrition, perfect for
dieting, and extremely wholesome - this is Vegetable Oats Khichdi! Let’s begin. I am taking ½ a cup of
split Yellow Moong Dal. Let’s wash the dal to
get rid of any impurities. The dal is washed. In a cooker on heat, I am taking - 1 tbsp. of Ghee. Once the ghee has heated, I am adding - 2 pinches of Asafoetida or Hing, 1 tsp. of Cumin Seeds, 1 tsp. of grated Ginger, 1 Onion - chopped, and 2 Green Chilies - chopped. Saute for 30 seconds. I am adding to this - ½ a cup of chopped Carrot, ½ a cup of Green Peas, and 1 Tomato - chopped. Saute the veggies for a minute. Next, I am adding - ¼th tsp. of Turmeric Powder, 1 tsp. of Red Chili Powder, Washed Moong Dal, and 1 cup of Rolled Oats. Bring everything together. Time to add - 2 tsp. of Salt or as per taste, and 4 cups of Water. Let the Khichdi cook for 2
whistles on medium flame. The cooker's pressure has
settled down, let’s check.
Healthy Oats Khichdi is ready but before
serving, let’s make a quick Veg Raita. I am taking - 1 cup of whisked Curd, ⅓rd cup of grated Carrot, ⅓rd cup of chopped Onion, 1 tbsp. of Green Chilies, 1 tbsp. of chopped Coriander Leaves, ¼th tsp. of Black Salt, ½ a tsp. of Regular Salt, ½ a tsp. of roasted Cumin Powder, Mix in and Veg Raita is ready! Time to serve. Top the Khichdi with
some Ghee if you like, some fresh Coriander Leaves, and serve it up with
Veg Raita for a wholesome meal! Until we meet again,
