A one-minute keto cheesecake... mmm if 
only they'd invented the microwave back   in the 60's. Anyway come on let us go, chop! chop! As aforementioned this, excuse me this 
is my show, what a glorious creature,   we're making a one minute cheesecake in the 
microwave keto friendly. Go on... I should   very much like to wife you. Okay goodbye. So this 
recipe is for two cupcake size cheesecakes and you   get a beautiful crust with the proper tasting 
cheesecake and I finished mine off with some   cream and some berries.

list is listed in the description box. Let's   get into the recipe now. Let's first make 
a yummy crust for the cheesecake. Add two   tablespoons of almond flour to a bowl or plate, 
then one tablespoon of melted butter or oil,   a teaspoon of powdered sweetener and a 
pinch of salt. Mix that all together to   combine and divide the crust mixture into 
two. If you're using paper cupcake molds   like I am you're going to need at least three 
cupcake molds so it can hold its shape in the   microwave. Do that for two cupcakes and 
then add the crust mixture to each paper   cupcake and flatten it into the base then set 
it aside so we can make the cheesecake filling. Add a quarter cup of cream cheese to a bowl and 
I'm just going to microwave it for 10 seconds   to soften it, then add one tablespoon of sour 
cream, two tablespoons of powdered sweetener,   one teaspoon of lemon juice, 1 egg white and 
a half teaspoon of vanilla extract.


Whisk that   together until smooth. You can also use a blender 
if your mixture is still lumpy and that bothers   you. Pour the mixture into the paper cupcake 
on top of the crust and it should fit perfectly   so that the mixture fills each cupcake mold. 
Let it cook for 60 seconds if you have a 700   watt microwave and if you have a thousand 
watt microwave let it cook for 45 seconds.   And this is how it looks when it's ready. Do let it cool and then refrigerate for one hour.   I just decorated it with some whipped cream, a 
berry or two and a sprinkle of powdered sweetener. Well   this cheesecake is beautifully soft and 
the crust with the hint of lemon in the   cheesecake just sets it off beautifully, I
