Welcome all! Papa G here. Today i present
French Onion Chicken. This recipe packs a whole lot of flavor in a small chicken
package. From the sweetness of the onions, to the creamy, nuttiness of the two
different types of cheeses, you'll enjoy a wonderful chicken entree from a very
simple recipe. Let's get started. I find it easier to mix our spice blend first and we'll mix our spices in our herbs separately. To 1
small bowl add 2 teaspoons of garlic powder; some salt; some ground black
pepper; and a little cayenne pepper. Give a mix to combine. To another bowl, add some oregano; dried thyme; and some sage. Mix to combine
and set our herbs and spices aside. The reason i like to separate the herbs and
spices is the finer spices will settle at the bottom and the leafy herbs on top
if we mix them together, making it just a bit harder to distribute evenly when we
apply them to the chicken.
To a skillet on medium-high heat, add 4 tablespoons of
unsalted butter. Also, add 1 tablespoon of extra virgin olive oil. Adding the oil to
the butter will help raise the smoke point so our butter won't burn so easily.
Add one large sliced onion. Season with some salt; ground black pepper; and some
rosemary. Stir and cook for about three to four minutes on medium high heat. Reduce the heat to medium and stir and
cook for about another 15 minutes, or until they go from a white and yellow, to
a brownish tan color, and look a little something like this.
Now I had a generous amount of minced
garlic and just about a teaspoon of a sugar substitute. Now add some red wine
and give this video a thumbs up if you like cooking with wine; and leave me a
comment if you also like to include it in your recipes. Continue to cook until
it reduces to something like this. Turn off the heat and let cool just a bit as
we work on our chicken. Lightly oil a 9 by 13 inch baking dish. Place 8 chicken
thighs, bottoms up, on the bottom of the dish. Season the bottoms with the spice
blend and then add the herbs. Flip the chicken over and repeat. Now divide our
onions evenly over the tops of the chicken. Top each with one slice of
provolone cheese. Cover with foil and bake in the center of a preheated 400°F
oven for about 25 minutes. Remove from the oven. Uncover; and add some
freshly grated Gruyere cheese to the top. You want to be sure to use Gruyere
cheese.
This cheese melts wonderfully and is often used in most fondues. It adds
the perfect nuttiness and the texture we want. Top with a generous amount of
parsley and place, uncovered, back in the oven for an additional 5 minutes. Remove
and let cool just a bit. Serve hot and enjoy a wonderful chicken meal.
