Welcome all! Papa G here. Today I present
my Cinnamon Roll Cake. Now you can enjoy the sweet taste of cinnamon rolls in this
easy to make, low-carb cake. With less than three net carbs per serving, you can
actually have your cake and eat it too. Let's get started. Prep an 8 by 8 or 9 by
7 inch baking dish with a light coating of oil and set aside. Add two cups of
almond flour to a medium mixing bowl; some baking powder; and a little salt. Use
a whisk to mix together and smooth out any large clumps. Set this aside as we
work on our wet ingredients. Add some powdered sugar substitute to a separate
bowl, followed by some unsalted, room-temperature butter. Use an electric
mixer and beat until mixed and crumbly. Add two lightly beaten eggs and one egg
yolk. Add a little water; some sour cream; and some vanilla extract. Mix again until
combined. Scrape down the sides with a spatula. Add half of the almond flour and
mix together. Now add the remaining flour and mix again until fully combined. Add the batter to the baking dish we
prepped earlier. Smooth out with a spatula and give a few shakes to flatten
and even out.
Set this aside. Now add some brown sugar substitute to a mixing bowl;
some ground cinnamon; and a little almond flour. Use a whisk to mix together and
smooth out any clumping. Add some melted, unsalted butter and switch to a spoon to
mix. Add the cinnamon mix to the cake batter by placing a spoonful to the top
in various spots, like you see here. Use a butter knife and gently swirl the
cinnamon mixture into and through the cake batter. Give a few more shakes to
flatten out. Place in the middle of a preheated 350°F oven for 38 to 43
minutes. When it's done, you'll see a nice golden brown top. Place on a cooling rack
while we work on our icing. Mix together some powdered sugar substitute and a
little vanilla extract. Now slowly add some heavy cream as we whisk. Feel free
to substitute almond milk or water here as well. Just eyeball it and add enough
liquid to thicken, but loose enough to drizzle. This right here is the
consistency you're looking for.
Drizzle the icing over the warm cake and let
cool just a bit. You'll see, as it cools the icing will harden nicely. Run a knife
around the edges. Cut into nine pieces and enjoy light and sweet cinnamony
goodness... deeelicious! There you have it folks! My sweet and
