Many of us skip breakfast because we’re rushing to get out the door in the morning. It's often called 'the most important meal of the day', and for good reason. Breakfast kick-starts our metabolism, breaks the overnight fasting period, replenishes supply of glucose to boost our energy levels. But more importantly, “We need to learn how to select our thoughts just the same way we select our clothes every day.” And what's a better way to start our mind on the right note than having a delicious breakfast? It doesn't have to be complex or time-consuming! So today I'm going to show you 7 healthy & easy breakfast recipes for the entire week! 2 cups rolled oats Blend until a flour-like consistency remains. Add 2 large ripe bananas. 355 ml plant based milk (I use almond milk) Blend again, until a smooth batter remains. You can add egg if you like ;) Add 1 Tsp baking powder Let the batter sit for 10 minutes. Grease the waffle pan/machine. Pour a portion of the batter onto it. Cook until the edges are crispy and the interior is cooked (5-8 minutes).


Butter and berries with honey/maple syrup for topping. Oatmeal Waffles Or apple and cinnamon. Nothing beats a big bowl of warm noodles soup on a cold day. Bring the veggies stock to a boil. Prepare, wash and cut the veggies of your choices. Today I use radish, carrot and mushroom. And fish cake! In the meantime you can prepare the noodles. I use buckwheat noodles so it need to be cooked separately. 1 Tbsp Mirin. 1 Tbsp soy sauce. Season to taste. Soba Noodles. Rinse and lightly scrub sweet potatoes. Use a fork to poke several holes into the sweet potatoes. Bake in the air-fryer 45 minutes at 180 °C. Allow to cool for 5-10 minutes.


Drizzle 1 Tbsp of almond/peanut butter. Add banana slices Walnut, pecan (optional) 1 Tsp of chia/blue poppy seed Baked Sweet Potato 200g pre mixed flour (Bánh xèo or bánh khọt flour) 190ml water 185ml coconut milk 1 Tsp turmeric powder Brush oil in the mini cupcakes pan. 2-3 Tbsp chopped green onion. Pre heat the oven at 250°C (top and bottom heat with fan mode). Chop shrimps or vegan imitation shrimp. Put the rack on the second lowest level and pre-heat the pan for one minute. Bake 6-8 minutes or until the interior is cooked and the edge has a golden brown color. It depends on how much batter you use/ I usually bake 6 minutes 30 seconds for 1 Tbsp batter. Sauce: Mix with a ratio of 5 hot water : 1 sugar : 1 lemon juice: 1 fish sauce. Add minced garlic, pepper and chilli (optional). Bánh khọt (Vietnamese mini savory pancakes) Perfect for a late breakfast or brunch ^^ 1 Tbsp dried seaweed 2 cups veggies stock Bring to a boil.



In the meantime I prepare the egg rolls. Japanese breakfast: tofu miso soup with egg rolls and rice. 1-2 Tbsp Miso paste. Japanese Breakfast 2 medium zucchinis. Bake zucchini in the air-fryer 8 minutes at 170 °C. Stir-fry thoroughly to remove excess moisture to avoid making the filling watery when baking. Bake for 6-7 minutes. Stuffed zucchini boats Peel and chop 1.5 apples into small pieces. 1/2 Cup Amaranth/Quinoa 1 1/2 cup water Bring to a boil, reduce heat, cover and let it simmer for 20-25 minutes or until water is almost absorbed. Add cinnamon powder, milk and honey according to your taste.
