INGREDIENTS FOR VANILLA CAKE:
2 3/4 cup flour
2 tsp baking powder
1/4 tsp salt
1 stick (1/2 cup=113 grams) unsalted butter (room temperature)
2 cups sugar (400 gram)
5 large eggs (room temperature)
1/2 cup oil
1 cup milk (room temperature)
1 1/2 tsp vanilla
3 tbsp. yogurt or sour cream
DIRECTIONS:
1. Preheat your oven at 350 f/ 180 c. Grease and line two 9 inch round pans.
2. Sift and combine all the dry ingredients (all-purpose flour, baking powder and salt) set aside.
3. Using a stand mixer (paddle attachment) or electric beater, medium speed, mix together sugar and butter until well combined.
4. Add oil and beat for 30 seconds or until pale in color.
5. Start adding eggs (one at a time).
6. Add vanilla essence and yogurt.
7. Now add dry ingredients and milk alternately.
8. Beat on slow speed for 1 minute to combine everything. Do not over beat.
9. Bake for 30-35 minutes or until toothpick inserted comes out clean.
10. Cool completely. Fill with fresh whipped cream, top with some fruits.

TIP:
After baking, cool for 10 times, and then remove cake from pans and place on a cooling rack, cover cake with cake pans for 10 times. By doing this you will have a soft and moist cake.
